Oysa bir g\u0131dan\u0131n kalitesi g\u0131da g\u00fcvenli\u011fi a\u00e7\u0131s\u0131ndan son derece \u00f6nemli.<\/p>\n<p>G\u0131da G\u00fcvenli\u011fi Derne\u011fi Ba\u015fkan\u0131 Samim Saner, g\u00fcvenilir g\u0131da t\u00fcketimine dair yapt\u0131\u011f\u0131 a\u00e7\u0131klamalarda g\u0131dan\u0131n tarladan sofram\u0131za gelene kadar yapt\u0131\u011f\u0131 yolculu\u011fun \u00f6nemine dikkat \u00e7ekti:<\/p>\n<p>&#8220;G\u0131da G\u00fcvenli\u011fi tarladan \u00e7atala bir b\u00fct\u00fcnd\u00fcr ve ba\u015flang\u0131\u00e7 noktas\u0131 tarlad\u0131r. Daha sonra hijyen kurallar\u0131 dahilinde g\u0131da i\u015flenme a\u015famas\u0131n\u0131n yan\u0131 s\u0131ra nakliye, depolama ve sat\u0131\u015f noktalar\u0131 ve sonunda da g\u0131dan\u0131n t\u00fcketime haz\u0131rland\u0131\u011f\u0131 mutfak arac\u0131l\u0131\u011f\u0131yla t\u00fcketiciye ula\u015fana kadar olan s\u00fcre\u00e7 b\u00fcy\u00fck \u00f6nem ta\u015f\u0131maktad\u0131r. B\u00f6ylece t\u00fcm zincir boyunca g\u0131da g\u00fcvenli\u011fi sa\u011fland\u0131\u011f\u0131 s\u00fcrece g\u0131da kaynakl\u0131 zehirlenmeler bir kader olmaktan \u00e7\u0131kar; \u00f6n\u00fcne ge\u00e7ilmesi m\u00fcmk\u00fcnd\u00fcr.&#8221;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Uygun ko\u015fullarda kurutulmayan g\u0131dalar kanser riskini artt\u0131r\u0131yor!<\/strong><\/p>\n<p>G\u0131da g\u00fcvenli\u011fi ihlallerinin ba\u015f\u0131nda en b\u00fcy\u00fck risk G\u0131da, Tar\u0131m ve Hayvanc\u0131l\u0131k Bakanl\u0131\u011f\u0131ndan \u00fcretim izni ve kay\u0131t onay\u0131 almam\u0131\u015f kay\u0131t d\u0131\u015f\u0131 yani merdiven alt\u0131 \u00fcr\u00fcnlerde yer al\u0131yor. Samim Saner, bu \u00fcr\u00fcnlerin hangi maddelerden, nerede, ne zaman ve ne \u015fekilde \u00fcretildi\u011fine dair takibinin olmad\u0131\u011f\u0131n\u0131, kay\u0131ts\u0131z seyyar sat\u0131c\u0131larda sokak ortalar\u0131nda sat\u0131lan g\u0131da \u00fcr\u00fcnlerinde de b\u00fcy\u00fck ihlallerin s\u00f6z konusu oldu\u011funu belirtiyor: &#8220;Bu tip seyyar sat\u0131\u015f noktalar\u0131 merdiven alt\u0131 \u00fcretimin de en \u00f6nemli m\u00fc\u015fterilerinden.<\/p>\n<p>T\u00fcm hijyen sorunlar\u0131n\u0131n mikroorganizmalar\u0131n g\u0131daya bula\u015fmas\u0131 ile ba\u015flad\u0131\u011f\u0131n\u0131n alt\u0131n\u0131 \u00e7izen Saner; o nedenle yap\u0131lacak ilk \u015feyin g\u0131daya zararl\u0131 mikroorganizmalar\u0131n ve zararl\u0131 kimyasallar\u0131n bula\u015fmas\u0131n\u0131n engellenmesi oldu\u011funu belirtti.  Bula\u015fman\u0131n engellenmesi de personel hijyeni,  bina hijyeni, zararl\u0131larla m\u00fccadele, \u00e7i\u011f g\u0131dalarda kullan\u0131lan ekipmanlar\u0131n pi\u015fmi\u015flerde kullan\u0131lmamas\u0131 gibi \u00e7e\u015fitli uygulamalarla sa\u011flan\u0131r. Ancak merdiven alt\u0131 \u00fcretimde t\u00fcm bunlardan s\u00f6z etmek imkans\u0131zd\u0131r ve bu \u015fekilde bir \u00fcretimle ortaya \u00e7\u0131kan \u00fcr\u00fcnlerin t\u00fcketici sa\u011fl\u0131\u011f\u0131n\u0131 tehdit eden bakteriler, vir\u00fcsler ve parazitler gibi mikrobiyolojik tehlikeler ihtiva etmesi ka\u00e7\u0131n\u0131lmazd\u0131r. Mikroorganizmalar nedeniyle ortaya \u00e7\u0131kan g\u0131da zehirlenmeleri genelde sorunlu g\u0131dan\u0131n t\u00fcketilmesinin ard\u0131ndan k\u0131sa bir s\u00fcre sonra ortaya \u00e7\u0131kar. Ancak do\u011fru tar\u0131msal uygulamalar yapmayan tarlalardan elde edilen ya\u015f sebze ve meyveler ve bunlardan imal edilen \u00fcr\u00fcnlerde pestisit denilen tar\u0131msal ila\u00e7 kal\u0131nt\u0131lar\u0131 sa\u011fl\u0131\u011f\u0131m\u0131z\u0131 tehdit ediyor. \u00d6zellikle kontrols\u00fcz \u00fcretim yap\u0131lan yerlerde \u00fcretilmi\u015f f\u0131nd\u0131k, incir ve k\u0131rm\u0131z\u0131biber gibi kurutulmu\u015f g\u0131dalar\u0131n uygun ko\u015fullarda kurutulmamas\u0131ndan kaynaklanan aflatoksin gibi k\u00fcf toksinleri ise v\u00fccutta sinsice girmekte ve y\u0131llar boyunca biriktikten sonra ba\u015fta kanser gibi \u00e7ok ciddi sa\u011fl\u0131k sorunlar\u0131na yol a\u00e7abilmektedir.&#8221;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>\u0130zlenebilir g\u0131da \u00fcr\u00fcnleri tercih edilmeli!<\/strong><\/p>\n<p>G\u0131da G\u00fcvenli\u011fi Derne\u011fi Ba\u015fkan\u0131 Samim Saner, t\u00fcketicinin kendi haklar\u0131n\u0131 ve sorgulamas\u0131 gereken \u00f6nemli noktolar\u0131 \u015f\u00f6yle \u00f6zetliyor:<\/p>\n<p>&#8220;T\u00fcketiciler olarak hepimize b\u00fcy\u00fck i\u015f d\u00fc\u015fmektedir, asl\u0131nda t\u00fcketici ayn\u0131 zamanda en iyi denet\u00e7idir. T\u00fcketici,  g\u0131dan\u0131n g\u00fcvenli\u011finin ger\u00e7ekten kontrol edilebilir oldu\u011fundan ya da nas\u0131l kontrol edece\u011finden emin de\u011fil. Tabii ki g\u0131da g\u00fcvenli\u011fini talep eden bilin\u00e7li bir t\u00fcketici grubu var. Ama bu, toplam t\u00fcketici grubunun k\u00fc\u00e7\u00fck bir k\u0131sm\u0131n\u0131 olu\u015fturuyor.
