Do\u011fru al\u0131\u015fveri\u015f ve evde do\u011fru y\u00f6ntemlerle haz\u0131rlanan g\u0131dalar sa\u011fl\u0131\u011f\u0131m\u0131z\u0131 korumam\u0131z a\u00e7\u0131s\u0131ndan \u00f6nemli rol oynar. Uluslararas\u0131 G\u0131da Koruma Birli\u011fi (IAFP &#8211; International Association for Food Protection) i\u015fbirli\u011fi ve G\u0131da, Tar\u0131m ve Hayvanc\u0131l\u0131k Bakanl\u0131\u011f\u0131 deste\u011fi ile G\u0131da G\u00fcvenli\u011fi Derne\u011fince  3 \u2013 4 May\u0131s 2012 tarihleri aras\u0131nda, \u0130stanbul Harbiye Askeri M\u00fcze ve K\u00fclt\u00fcr Sitesi&#8217;nde \u00fc\u00e7\u00fcnc\u00fcs\u00fc d\u00fczenlenecek olan G\u0131da G\u00fcvenli\u011fi Kongresi Ba\u015fkan\u0131 Samim Saner al\u0131\u015fveri\u015f yaparken ve evde g\u0131da haz\u0131rlarken dikkat etmemiz gereken kurallar\u0131 anlat\u0131yor!<\/p>\n<p style=\"font-weight: 400;\">G\u00fcvenli g\u0131da insan sa\u011fl\u0131\u011f\u0131na uygun g\u0131da anlam\u0131na gelmektedir. G\u0131da maddeleri, tarlada-\u00e7iftlikte \u00fcretimlerinden son t\u00fcketimlerine kadar her a\u015famada bir\u00e7ok riskler bar\u0131nd\u0131r\u0131rlar.<\/p>\n<p style=\"font-weight: 400;\">Toplu g\u0131da t\u00fcketiminin artmas\u0131 ve turistik-ticari seyahatlerin artmas\u0131, g\u0131dalar\u0131n uluslararas\u0131 ticarete konu olmas\u0131 gibi bir\u00e7ok fakt\u00f6r bu riskleri artt\u0131rmaktad\u0131r. Bu risklerin ba\u015f\u0131nda mikrobiyel kaynakl\u0131 riskler gelmektedir. T\u00fcketiciler evde ve al\u0131\u015fveri\u015fte yapt\u0131klar\u0131 kimi yanl\u0131\u015flar\u0131n bilincinde olarak bu riskleri \u00f6nemli \u00f6l\u00e7\u00fcde azaltabilirler.<\/p>\n<p style=\"font-weight: 400;\">Al\u0131\u015fveri\u015f yaparken t\u00fcketiciler nelere dikkat etmeli?<\/p>\n<ul style=\"font-weight: 400;\">\n<li>G\u0131da maddelerinin (ya\u015f meyve ve sebze hari\u00e7) ambalajl\u0131 ve etiketli bir bi\u00e7imde sat\u0131\u015fa sunulmas\u0131 yasal zorunluluktur. A\u00e7\u0131kta, sokakta, pazar yerlerinde d\u00f6kme olarak sat\u0131lan, \u00fcreticisi ve \u00f6zellikleri belli olmayan \u00fcr\u00fcnler sat\u0131n al\u0131nmamal\u0131d\u0131r.  Mutlaka ambalajl\u0131, etiketli, \u00fcreticisi ve markas\u0131 belli olan \u00fcr\u00fcnler sat\u0131n al\u0131nmal\u0131d\u0131r.<\/li>\n<li>Is\u0131l i\u015flem g\u00f6rmemi\u015f s\u00fct ve s\u00fctlerden \u00fcretilen peynir, tereya\u011f\u0131, krema gibi \u00fcr\u00fcnlerin insan sa\u011fl\u0131\u011f\u0131n\u0131 tehdit eden zararl\u0131 bir mikroorganizmay\u0131 i\u00e7erme olas\u0131l\u0131klar\u0131 \u00e7ok y\u00fcksektir.  Bu \u00fcr\u00fcnler pi\u015firilmeden t\u00fcketilmemelidir.<\/li>\n<li>Kasap ve marketlerde d\u00f6kme halde haz\u0131r k\u0131yma sat\u0131\u015f\u0131 yasal de\u011fildir. Bu \u00fcr\u00fcnler sadece ambalaj i\u00e7erisinde marka ve etiket bilgileri tam olmas\u0131 halinde sat\u0131labilir.<\/li>\n<li>Ambalaj\u0131 y\u0131rt\u0131lm\u0131\u015f, bozulmu\u015f ve koruyuculu\u011fu kalmam\u0131\u015f \u00fcr\u00fcnler sat\u0131n al\u0131nmamal\u0131d\u0131r.<\/li>\n<li>Dondurulmu\u015f \u00fcr\u00fcnler al\u0131\u015fveri\u015fin sonunda al\u0131nmal\u0131; e\u011fer hemen t\u00fcketilmeyecekse \u00e7\u00f6z\u00fclmeden eve ula\u015ft\u0131rarak hemen buzlu\u011fa yerle\u015ftirilmelidir.<\/li>\n<li>Dondurulmu\u015f g\u0131dalarda \u015fekil bozukluklar\u0131 \u00e7\u00f6z\u00fcl\u00fcp yeniden donman\u0131n g\u00f6stergesi olabilir. Bu t\u00fcr \u00fcr\u00fcnler sat\u0131n al\u0131nmamal\u0131d\u0131r.<\/li>\n<li>Oda s\u0131cakl\u0131\u011f\u0131nda sat\u0131\u015fa sunulan past\u00f6rize s\u00fctler, yo\u011furtlar sat\u0131n al\u0131nmamal\u0131; sat\u0131c\u0131 bu konuda uyar\u0131lmal\u0131d\u0131r.<\/li>\n<li>Sat\u0131n al\u0131nan g\u0131da maddeleri b\u00f6cek ilac\u0131, naftalin gibi toksik maddelerle, deterjan &#8211;  dezenfektan gibi temizlik maddeleri ile birlikte ta\u015f\u0131nmamal\u0131; temaslar\u0131 kesin olarak engellenmelidir.<\/li>\n<li>Kutusunda \u015fi\u015fkinlik, s\u0131zma olu\u015fmu\u015f olan konserveler sat\u0131n al\u0131nmamal\u0131d\u0131r.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"> Evde g\u0131da maddeleri konusunda nelere dikkat edilmeli?<\/p>\n<ul style=\"font-weight: 400;\">\n<li>Eller tuvalet kullan\u0131m\u0131ndan sonra, \u00e7ocuklara tuvalet konusunda yard\u0131mc\u0131 olduktan sonra, toz, toprak gibi yabanc\u0131 maddelerle temastan sonra, yemek haz\u0131rlama veya yeme i\u015fleminden \u00f6nce, et, bal\u0131k, yumurta, y\u0131kanmam\u0131\u015f meyve ve sebzeler gibi \u00e7i\u011f maddelerle temastan sonra, mutlaka sabun ve tercihen s\u0131cak su kullanarak en az 20 saniye boyunca dikkatle y\u0131kanmal\u0131d\u0131r.<\/li>\n<li>\u00c7apraz bula\u015fma riskini \u00f6nlemek i\u00e7in tavuk eti, bal\u0131k eti veya k\u0131rm\u0131z\u0131 et gibi \u00e7i\u011f \u00fcr\u00fcnlerle temas eden mutfak malzemeleri iyice y\u0131kan\u0131p temizlenmeden t\u00fcketime haz\u0131r \u00fcr\u00fcnlerle temas ettirilmemelidir.  Bu \u00fcr\u00fcnler dolapta ayr\u0131 raflarda muhafaza edilmelidir<\/li>\n<li>G\u0131da maddelerinin pi\u015firilmesi ve y\u0131kanmas\u0131nda mutlaka insan t\u00fcketimine uygun temiz sular kullan\u0131lmal\u0131d\u0131r.<\/li>\n<li>G\u0131da ile temasta bulunan kaplar; g\u0131da d\u0131\u015f\u0131nda hi\u00e7bir madde ile temas ettirilmemeli, de\u011fi\u015fik ama\u00e7larla kullan\u0131lmamal\u0131d\u0131r.<\/li>\n<li> G\u0131da maddeleri toksik maddelerle ve deterjan &#8211;  dezenfektan gibi temizlik maddeleri ile birlikte bulunmamal\u0131d\u0131r.<\/li>\n<li> Pi\u015firilmi\u015f g\u0131dalar hemen t\u00fcketilmeli ya da daha sonra t\u00fcketilecek ise h\u0131zl\u0131ca so\u011fumas\u0131n\u0131 takiben buzdolab\u0131nda saklanmal\u0131d\u0131r.<\/li>\n<li>Dondurulmu\u015f \u00fcr\u00fcnler oda s\u0131cakl\u0131\u011f\u0131nda de\u011fil, buzdolab\u0131 s\u0131cakl\u0131\u011f\u0131nda (4-8 derecede) veya varsa mikrodalga f\u0131r\u0131nda \u00e7\u00f6z\u00fcnd\u00fcr\u00fclmeli ve bir kez \u00e7\u00f6z\u00fcnd\u00fcr\u00fclm\u00fc\u015f \u00fcr\u00fcn bir daha dondurulmamal\u0131d\u0131r.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"> Ya\u015fam\u0131n her a\u015famas\u0131ndaki g\u0131da g\u00fcvenli\u011fi sorunlar\u0131, riskler ve yap\u0131lmas\u0131 gerekenler 3.
