{"id":2782,"date":"2007-10-03T09:42:19","date_gmt":"2007-10-03T06:42:19","guid":{"rendered":"https:\/\/ggd.org.tr\/en\/?p=2782"},"modified":"2021-07-29T15:34:55","modified_gmt":"2021-07-29T12:34:55","slug":"aspartam","status":"publish","type":"post","link":"https:\/\/ggd.org.tr\/en\/aspartam\/","title":{"rendered":"Aspartame"},"content":{"rendered":"<p align=\"justify\">Genel:<br \/>\nAspartam 20 y\u0131ldan beri y\u00fczmilyonlarca insan taraf\u0131ndan diyet ve light \u00fcr\u00fcnler ile tablet \u015fekli halinde kullan\u0131lan bir tatland\u0131r\u0131c\u0131d\u0131r. \u015eu an d\u00fcnyada diyabet ve obezite sorunlar\u0131 ya\u015fayan milyonlarca insan i\u00e7in \u00f6nemli bir \u015feker ikamesidir. T\u00fcm g\u0131da katk\u0131 maddeleri gibi aspartam da uluslararas\u0131 ve ulusal sa\u011fl\u0131k otoritelerinin bilimsel veriler \u0131\u015f\u0131\u011f\u0131nda belirledikleri kurallara g\u00f6re kullan\u0131l\u0131r. 1965 y\u0131l\u0131nda ABD&#8217;de bulunduktan sonra FDA(Amerikan G\u0131da ve \u0130la\u00e7 Te\u015fkilat\u0131) taraf\u0131ndan y\u0131llar s\u00fcren uzun ara\u015ft\u0131rmalar sonucunda piyasaya \u00e7\u0131kma izni verilmi\u015ftir. Aspartam\u0131n g\u00fcvenilirli\u011fi daha sonra Birle\u015fmi\u015f Milletlere ba\u011fl\u0131 FAO(G\u0131da ve Tar\u0131m \u00d6rg\u00fct\u00fc) ile WHO(D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc) nun ortak G\u0131da Katk\u0131lar\u0131 Uzmanl\u0131k komitesi (JECFA) ve AB G\u0131da Bilimsel Komitesi taraf\u0131ndan da de\u011ferlendirilmi\u015f ve onaylanm\u0131\u015ft\u0131r. Sonu\u00e7ta; \u015fu an ABD&#8217;nde, AB&#8217;nde ve \u00fclkemiz de dahil olmak \u00fczere 100&#8217;e yak\u0131n \u00fclkede kullan\u0131m\u0131na izin verilen bir maddedir.<\/p>\n<p align=\"justify\">\u00dcr\u00fcnler i\u00e7erisinde aspartam\u0131n kullan\u0131m limitleri AB mevzuat\u0131 ve T\u00fcrk mevzuat\u0131na gore tamamen ayn\u0131d\u0131r. Bu maddenin AB taraf\u0131ndan izin ald\u0131ktan sonra etiketler \u00fczerindeki tan\u0131nma numaras\u0131 E 951 olarak belirlenmi\u015ftir. Bir g\u0131da katk\u0131 maddesine E numaras\u0131 verilmesi o maddenin AB bilimsel komitelerince izin ald\u0131\u011f\u0131n\u0131n kan\u0131t\u0131d\u0131r. Aspartam \u00fczerinde g\u00fcn\u00fcm\u00fcze kadar yap\u0131lan y\u00fczlerce bilimsel ara\u015ft\u0131ma sonucuna gore bir sa\u011fl\u0131k problemi durumuna rastlanmam\u0131\u015ft\u0131r. Ancak her maddenin ADI olarak k\u0131salt\u0131lan bir g\u00fcnl\u00fck kullan\u0131m miktar\u0131 bulunmaktad\u0131r. Aspartam\u0131n g\u00fcnl\u00fck kullan\u0131m miktar\u0131 kg olarak v\u00fccut a\u011f\u0131rl\u0131\u011f\u0131 ba\u015f\u0131na 40 mg&#8217;\u0131 a\u015fmamal\u0131d\u0131r. Ortalama 70 kg gelen bir insan i\u00e7in g\u00fcnl\u00fck a\u015f\u0131lmamas\u0131 gereken miktar 2800 mg olmaktad\u0131r. Bu miktar; bir tablette yakla\u015f\u0131k 20 mg aspartam oldu\u011funu d\u00fc\u015f\u00fcn\u00fcrsek, 140 tablete; veya bir \u00fcr\u00fcnde ortalama 100 mg tatland\u0131r\u0131c\u0131 oldu\u011funu d\u00fc\u015f\u00fcn\u00fcrsek 28 birim \u00fcr\u00fcne denk gelmektedir.<\/p>\n<p align=\"justify\">Son g\u00fcnlerde ortaya \u00e7\u0131kan aspartam aleyhindeki haberlerin kayna\u011f\u0131 ise \u0130talya Bologna&#8217;da bulunan Ramazzini Enstit\u00fcs\u00fcn\u00fcn yapt\u0131\u011f\u0131 bir ara\u015ft\u0131rman\u0131n daha tam kesinlik kazanmam\u0131\u015f sonu\u00e7lar\u0131d\u0131r. Avrupa G\u0131da G\u00fcvenli\u011fi Otoritesi-EFSA , g\u0131da g\u00fcvenli\u011fi konusunda temel y\u00f6nlendirmeleri yapan AB \u00fclkelerinin ba\u011fl\u0131 oldu\u011fu \u00fclkeler \u00fcst\u00fc bir bilimsel kurumdur. EFSA&#8217;n\u0131n bu son ara\u015ft\u0131rma raporuna dayanarak aspartam kullan\u0131m\u0131yla ilgili \u00f6nerisi \u00e7ok a\u00e7\u0131k bir \u015fekilde; t\u00fcketicilerin t\u00fcketim al\u0131\u015fkanl\u0131klar\u0131n\u0131 de\u011fi\u015ftirmemeleri y\u00f6n\u00fcndedir. EFSA konu ile ilgili \u00e7al\u0131\u015fmalar\u0131n\u0131 s\u00fcrd\u00fcrmektedir.<\/p>\n<p>Bilimsel:<br \/>\nAspartam \u015fekerden 200 kez daha tatl\u0131 bir yapay tadland\u0131r\u0131c\u0131d\u0131r. Kimyasal isim olarak L-aspartyl-L-phenylalanine&#8217;in dipeptit metal esteridir. Yap\u0131s\u0131 \u00fc\u00e7 kimyasal maddenin biraraya gelmesi ile olu\u015fmu\u015ftur. Bu \u00fc\u00e7 maddeden ikisi organizmada proteinlerin yap\u0131 ta\u015flar\u0131ndan olan aspartik asit ve fenilalanin amino asitleridir. \u00dc\u00e7\u00fcnc\u00fc madde ise metanold\u00fcr.<\/p>\n<p>Aspartam konusundaki temel iddia, aspartam metabolizmas\u0131 sonunda metanol \u015fekillendi\u011fi ve bunun da formaldehit ve formik aside d\u00f6n\u00fc\u015ferek toksisiteye neden oldu\u011fudur. A\u015fa\u011f\u0131daki form\u00fclden anla\u015f\u0131laca\u011f\u0131 \u00fczere aspartam\u0131n metabolizmas\u0131 sonucunda ger\u00e7ekten metanol olu\u015fur.<\/p>\n<p align=\"justify\">Bu metanolde organizmada formaldehit ve formik asite d\u00f6n\u00fc\u015f\u00fcr. \u0130ddia buraya kadar do\u011frudur. Yanl\u0131\u015f olan aspartam metabolizmas\u0131 sonucunda olu\u015fan bu miktardaki maddelerin bir toksisiteye neden olabilece\u011fi iddias\u0131d\u0131r. Yap\u0131lan \u00e7ok say\u0131da bilimsel \u00e7al\u0131\u015fmayla g\u00fcnde 40 mg\/kg&#8217;a kadar kullan\u0131lan aspartam\u0131n \u00f6m\u00fcr boyu kullan\u0131mda herhangi bir sa\u011fl\u0131k sorununa yol a\u00e7mayaca\u011f\u0131 kan\u0131tlanm\u0131\u015ft\u0131r.
