{"id":2553,"date":"2012-01-06T13:15:30","date_gmt":"2012-01-06T10:15:30","guid":{"rendered":"https:\/\/ggd.org.tr\/en\/?p=2553"},"modified":"2021-07-28T16:18:36","modified_gmt":"2021-07-28T13:18:36","slug":"kanal-d-19-aralik-2011-tarihli-doktorum-programina-dair-aciklama","status":"publish","type":"post","link":"https:\/\/ggd.org.tr\/en\/kanal-d-19-aralik-2011-tarihli-doktorum-programina-dair-aciklama\/","title":{"rendered":"Announcement Related to the \u201cMy Doctor\u201d TV Programme Broadcasted on Channel D &#8211; 19 December 2011"},"content":{"rendered":"<p style=\"font-weight: 400;\">19 Aral\u0131k 2011 tarihinde Kanal D televizyonunda yay\u0131nlanan &#8220;Doktorum&#8221; adl\u0131 programa konuk olarak kat\u0131lan Radyasyon Onkolojisi Uzman\u0131 Dr.Yavuz Dizdar ve \u00c7ocuk Metabolizma ve Beslenme Uzman\u0131 Dr. Ahmet Ayd\u0131n sanayi \u00f6l\u00e7e\u011finde i\u015flem g\u00f6rm\u00fc\u015f s\u00fct ve s\u00fct \u00fcr\u00fcnlerinin ba\u015fta \u00e7ocuk metabolizmas\u0131 olmak \u00fczere insan sa\u011fl\u0131\u011f\u0131n\u0131 olumsuz etkiledi\u011fi sav\u0131n\u0131 ileri s\u00fcrm\u00fc\u015f ve say\u0131s\u0131z teknik bilgi hatas\u0131 dolu konu\u015fmalar\u0131nda topluma bilimsel dayanaktan yoksun bilgiler aktarm\u0131\u015flard\u0131r.<\/p>\n<p style=\"font-weight: 400;\">Her iki konuk hekim de \u0131s\u0131l i\u015flem sonucu s\u00fct\u00fcn t\u00fcm besleyici niteliklerini yitirdi\u011fini ve bu nedenle de &#8220;\u00f6l\u00fc bir g\u0131da&#8221; haline geldi\u011fini ileri s\u00fcrm\u00fc\u015f ve end\u00fcstriyel i\u015flem g\u00f6rm\u00fc\u015f s\u00fct ve \u00fcr\u00fcnlerinden uzak durulmas\u0131 gerekti\u011fini vurgulam\u0131\u015ft\u0131r. Dr.Ayd\u0131n, devamla, g\u00fcvenilir (!) bir s\u00fct\u00e7\u00fc bulunmas\u0131 ko\u015fulu ile sokak s\u00fct\u00fcne y\u00f6nelinmesini sal\u0131k vermi\u015f ve ev tipi yo\u011furt yap\u0131m\u0131 s\u0131ras\u0131nda Karadeniz k\u00f6ylerinde kullan\u0131lan geleneksel y\u00f6ntemin  s\u00fcte bir miktar toprak at\u0131lmas\u0131 oldu\u011funu dile getirebilmi\u015ftir. Teknik hata dolu olan ve  toplumu yanl\u0131\u015f bilgilendiren bu konu\u015fmalara yan\u0131tlar a\u015fa\u011f\u0131da verilmi\u015ftir:<\/p>\n<p style=\"font-weight: 400;\">Birinci konu olan s\u00fcte \u0131s\u0131l i\u015flem uygulamas\u0131 (past\u00f6rizasyon veya UHT i\u015flemi) ile s\u00fctte do\u011fal olarak yer alan ve insan sa\u011fl\u0131\u011f\u0131na zarar verme potansiyeli y\u00fcksek mikroorganizmalar\u0131n s\u00fctten uzakla\u015ft\u0131r\u0131lmas\u0131 amac\u0131yla uygulanan bir teknolojik i\u015flemdir ve b\u00fct\u00fcn\u00fcyle zarars\u0131zd\u0131r. G\u00fcn\u00fcm\u00fczde teknolojide uygulanan \u0131s\u0131l i\u015flem, uzun y\u0131llar bilimsel \u00e7al\u0131\u015fmalar sonucunda belirlenmi\u015f olup hem s\u00fct\u00fcn besin en y\u00fcksek seviyede de\u011ferinin korunmas\u0131 hem de \u0131s\u0131ya en dayan\u0131kl\u0131 zararl\u0131 mikroorganzimalar\u0131n imhas\u0131 i\u00e7in yeterlidir. S\u00fcte uygulanan \u0131s\u0131l i\u015flem s\u00fctte en fazla vitaminler \u00fczerinde olumsuz etki yapmaktad\u0131r. Ancak, s\u00fct teknolojisi, ba\u011f\u0131ms\u0131z bilim dal\u0131 olarak i\u015flev g\u00f6rmeye ba\u015flad\u0131\u011f\u0131 1900&#8217;l\u00fc y\u0131llar\u0131n ba\u015f\u0131ndan bu yana s\u00fct\u00fcn temel bir vitamin kayna\u011f\u0131 olarak g\u00f6r\u00fclmedi\u011fi bilinen bir ger\u00e7ektir.<\/p>\n<p style=\"font-weight: 400;\">\u00c7i\u011f s\u00fct\u00fcn do\u011fal yap\u0131s\u0131nda yer alan mikroorganizmalar laktik asit bakterileri ve laktik asit bakterisi olmayan mikroorganizmalar olarak temel iki gruba ayr\u0131lmaktad\u0131r. Dr.Ayd\u0131n&#8217;\u0131n ifade etti\u011fi gibi bu mikroorganizmalar\u0131n tamam\u0131n\u0131n probiyotik olarak adland\u0131r\u0131lmas\u0131 do\u011fru de\u011fildir. S\u00fct\u00fcn do\u011fal yap\u0131s\u0131nda yer alan ve probiyotik \u00f6zelliklere sahip baz\u0131 bakteriler di\u011fer s\u00fct mikroorganzimalar\u0131 ile geli\u015fimleri i\u00e7in gerekli olan besin maddelerine ula\u015fma konusunda rekabet i\u00e7erisindedir ve genelde bu rekabet ortam\u0131nda ba\u015far\u0131s\u0131z olmaktad\u0131r. S\u00fctte \u00e7ok \u00e7e\u015fitli mikroorganizmalar yer almaktad\u0131r ve bu mikroorganizmalar\u0131n bir b\u00f6l\u00fcm\u00fc insan sa\u011fl\u0131\u011f\u0131na yarar sa\u011flarken bir b\u00f6l\u00fcm\u00fc de \u00f6l\u00fcmc\u00fcl sonu\u00e7lar do\u011furabilecek kadar insan sa\u011fl\u0131\u011f\u0131n\u0131 tehdit eder durumdad\u0131r. S\u00fcte \u0131s\u0131l i\u015flem uygulanmas\u0131 ve ard\u0131ndan hijyenik ko\u015fullarda s\u00fct \u00fcr\u00fcnlerine i\u015flenmesinin ard\u0131nda yatan temel neden bu zararl\u0131 mikroorganizmalar\u0131n s\u00fctten uzakla\u015ft\u0131r\u0131lmas\u0131 ve s\u00fcte yeniden bula\u015fmas\u0131n\u0131n engellenmesidir. \u00c7i\u011f s\u00fctte probiyotik bakteri de var bu bakteriler \u0131s\u0131l i\u015flem ile \u00f6l\u00fcyor o nedenle sanayi s\u00fct\u00fc kullanmay\u0131n mesaj\u0131 bu nedenle hatal\u0131d\u0131r. Ayr\u0131ca, Dr.Dizdar, g\u00fcvenilir bir s\u00fct\u00e7\u00fcden al\u0131nan s\u00fct\u00fcn ev ko\u015fullar\u0131nda yo\u011furda d\u00f6n\u00fc\u015ft\u00fcr\u00fclmesini ve hatta bu s\u00fcre\u00e7te i\u00e7erisine k\u00f6ylerden getirilen yo\u011furtlar\u0131n maya olarak kullan\u0131lmas\u0131n\u0131  \u00f6nermektedir. Evde yo\u011furt yaparken s\u00fct\u00fcn kaynat\u0131lmas\u0131 zorunlu bir uygulamad\u0131r. 100 \u00b0C dolay\u0131nda kaynayan s\u00fctte besin kayb\u0131 olmuyor da 72-75 \u00b0C&#8217;de 15-30 saniye (past\u00f6rize s\u00fct) ya da 140-143 \u00b0C&#8217;de 1-4 saniye (UHT s\u00fct) \u0131s\u0131l i\u015flem g\u00f6ren s\u00fctte mi besin kayb\u0131 oluyor anla\u015f\u0131lamamaktad\u0131r. Ayr\u0131ca, yo\u011furt yap\u0131m\u0131 s\u0131ras\u0131nda s\u00fcte at\u0131lmas\u0131 \u00f6nerilen toprak par\u00e7as\u0131nda gelebilecek hastal\u0131k yap\u0131c\u0131 mikroorganizmalar da g\u00f6z ard\u0131 edilmektedir. \u015eu \u00e7arp\u0131c\u0131 bilginin bilinmesinde b\u00fcy\u00fck yarar bulunmaktad\u0131r. \u00dclkemizde iyimser bir yakla\u015f\u0131m ile \u00e7i\u011f s\u00fct\u00fcn mikroorganizma y\u00fck\u00fc 1 milyon adet bakteri\/ ml&#8217;nin \u00fczerindedir. Bu oran\u0131n AB normlar\u0131ndaki kar\u015f\u0131l\u0131\u011f\u0131 ise en fazla 100 bin adet bakteri\/ml&#8217;dir. Sa\u011f\u0131m teknolojisinin yeterli olmad\u0131\u011f\u0131, kay\u0131td\u0131\u015f\u0131 s\u00fct \u00fcretimin yayg\u0131n oldu\u011fu ve sa\u011f\u0131m sonras\u0131 hijyen konular\u0131n\u0131n dikkate al\u0131nmad\u0131\u011f\u0131 \u00fclkemizde kontrols\u00fcz sokak s\u00fct\u00fcn\u00fcn \u00fcst\u00fcnl\u00fc\u011f\u00fcn\u00fcn vurgulanmas\u0131 veya s\u00fcte alternatif s\u00fct \u00fcr\u00fcnlerinin t\u00fcketiminin \u00f6nerilmesi kabul edilemez bir yakla\u015f\u0131md\u0131r.<\/p>\n<p style=\"font-weight: 400;\">Dr.Ayd\u0131n s\u00fct\u00fcn alerjik bir besin oldu\u011funu ve bu nedenle s\u00fct i\u00e7mek yerine yo\u011furt t\u00fcketimini \u00f6nermektedir. Bu iki s\u00fct \u00fcr\u00fcn\u00fc insan metabolizmas\u0131 a\u00e7\u0131s\u0131ndan birbiri ile kar\u015f\u0131la\u015ft\u0131r\u0131lmayacak \u00fcst\u00fcn \u00f6zelliklere sahiptir. Yo\u011furt \u015f\u00fcphesiz ki insan sa\u011fl\u0131\u011f\u0131 i\u00e7in vazge\u00e7ilmez bir g\u0131da konumundad\u0131r. Ancak, s\u00fct temel beslenme de\u011ferleri nedeniyle \u00f6zellikle \u00e7ocuk beslenmesi i\u00e7in olmazsa olmaz g\u0131da konumundad\u0131r.<\/p>\n<p style=\"font-weight: 400;\">Dr.Ayd\u0131n homojenizasyon i\u015flemi (s\u00fct \u015fi\u015fesinin \u00fczerinde kaymak birikiminin engellenmesi i\u00e7in uygulanan tamamen fiziksel bir uygulamad\u0131r) ile s\u00fct\u00fcn dayan\u0131m\u0131 aras\u0131nda ili\u015fki kurmaktad\u0131r. Homojenizasyon i\u015flemi s\u0131ras\u0131nda s\u00fct\u00fcn ya\u011f par\u00e7ac\u0131klar\u0131 daha k\u00fc\u00e7\u00fck boyutlara par\u00e7alanmakta, s\u00fct ya\u011f\u0131 s\u00fct\u00fcn her yan\u0131na e\u015fit olarak da\u011f\u0131lmakta ve s\u00fct ya\u011f\u0131n\u0131n sindirimi kolayla\u015fmaktad\u0131r. Bu arada kaymak ba\u011flama s\u00fcresi de uzad\u0131\u011f\u0131ndan s\u00fct g\u00f6rsel \u00e7ekicilik kazanmaktad\u0131r. Dolay\u0131s\u0131yla homojenizasyon s\u00fct\u00fcn besin de\u011ferine zarar verici bir uygulama de\u011fildir. Ayr\u0131ca, s\u00fcte uygulanan UHT ve homojenizasyon i\u015flemi s\u0131ras\u0131nda uygulanan bas\u0131n\u00e7 de\u011ferlerinin s\u00fct proteinleri \u00fczerinde etkisi bulunmamaktad\u0131r. Bu bilgi on y\u0131llard\u0131r bilinmesine kar\u015f\u0131n bir t\u0131p doktorunun uzman olmad\u0131\u011f\u0131 bir konuda UHT i\u015flemi s\u0131ras\u0131nda uygulanan bas\u0131nc\u0131n proteinleri ka\u011f\u0131t gibi buru\u015fturmas\u0131ndan s\u00f6z etmesi tamam\u0131yla bilim ve bilgi d\u0131\u015f\u0131 bir yakla\u015f\u0131md\u0131r.<\/p>\n<p style=\"font-weight: 400;\">Son olarak, kamuoyunun do\u011fru bilgilendirilmesi i\u00e7in medya organlar\u0131na da b\u00fcy\u00fck g\u00f6rev d\u00fc\u015fmektedir. Programlarda konuk olarak a\u011f\u0131rlanan bilim insanlar\u0131n\u0131n bilimsel ara\u015ft\u0131rma konular\u0131 ile dile getirdikleri konular aras\u0131nda bir ili\u015fkinin varl\u0131\u011f\u0131 mutlaka aranmal\u0131d\u0131r. Aksi takdirde iyi niyetle bile s\u00f6ylense verilen mesajlar\u0131n yanl\u0131\u015f anlamalara yol a\u00e7mas\u0131 ka\u00e7\u0131n\u0131lmazd\u0131r. T\u00fcm d\u00fcnyada \u00e7ocuklar\u0131n geli\u015fim d\u00f6nmelerinde g\u00fcnde iki bardak s\u00fct i\u00e7meleri te\u015fvik edilirken ve \u00fclkemizde zaten yeterince y\u00fcksek olmayan s\u00fct t\u00fcketimini artt\u0131rmaya y\u00f6nelik iyi niyetli \u00e7abalar h\u0131z kazanm\u0131\u015fken bu tarz talihsiz a\u00e7\u0131klamalar amac\u0131n\u0131 a\u015fmaktad\u0131r.
