Komisyon, bu de\u011ferlendirme sonucunda \u00f6zellikle ba\u011f\u0131rsak ve karaci\u011fer dikkate al\u0131narak yap\u0131lan analiz sonu\u00e7lar\u0131nda olumsuz art\u0131\u015flar meydana geldi\u011fini fakat bu durumun ancak a\u015f\u0131r\u0131 y\u00fcksek miktarlar\u0131n (30 mg\/kg v\u00fccut a\u011f\u0131rl\u0131\u011f\u0131) uygulanmas\u0131 sonucu ortaya \u00e7\u0131kt\u0131\u011f\u0131n\u0131 belirtmi\u015ftir. Monosodyum glutamat (MSG) al\u0131m\u0131 sonucunda glutamat\u0131n plasenta zar\u0131n\u0131 ge\u00e7medi\u011fi g\u00f6r\u00fclm\u00fc\u015ft\u00fcr. Bebeklerin glutamat\u0131 yeti\u015fkinler gibi metabolize etti\u011fi tespit edilmi\u015ftir. Geleneksel toksisite \u00e7al\u0131\u015fmalar\u0131 MSG&#8217;nin \u00e7e\u015fitli g\u0131dalarla al\u0131m\u0131n\u0131n herhangi spesifik toksik veya kanserojenik bir etkisinin olmad\u0131\u011f\u0131n\u0131 ve \u00fcreme ve teratoloji \u00e7al\u0131\u015fmalar\u0131nda herhangi olumsuz bir sonuca sebep olmad\u0131\u011f\u0131n\u0131 g\u00f6stermi\u015ftir. \u0130nsanlarla yap\u0131lan \u00e7al\u0131\u015fmalarda MSG&#8217;nin &#8220;\u00c7in Restaurant\u0131 Sendromu&#8221; veya di\u011fer baz\u0131 \u00f6zel rahats\u0131zl\u0131klarla do\u011frudan bir ili\u015fkisinin saptanamamas\u0131 nedeniyle JECFA taraf\u0131ndan glutamik asit ve tuzlar\u0131 i\u00e7in &#8220;G\u00fcnl\u00fck kabul edilebilir d\u00fczey (ADI) belirlenmemi\u015ftir&#8221; ibaresinin konmas\u0131na karar verilmi\u015ftir. Bebekler i\u00e7in de ilave olumsuz bir durum tespit edilmemi\u015ftir. 1991 y\u0131l\u0131nda Avrupa Birli\u011fi&#8217;nin Bilimsel G\u0131da Komitesi (SCF) taraf\u0131ndan yap\u0131lan de\u011ferlendirmeler sonucunda da benzer veriler elde edilmi\u015ftir. Amerikan Deneysel Biyoloji Derne\u011fi (FASEB) ve Amerikan G\u0131da ve \u0130la\u00e7 Dairesi (FDA) taraf\u0131ndan 1996 y\u0131l\u0131nda yap\u0131lan de\u011ferlendirmelerde ise MSG&#8217;ye kar\u015f\u0131 hassas olan bir grubun (\u00f6rn. ast\u0131ml\u0131 hastalar\u0131n) olabilece\u011fi g\u00f6z ard\u0131 edilmeksizin JECFA ve SCF taraf\u0131ndan yap\u0131lan de\u011ferlendirmeler desteklenmi\u015ftir. Sonu\u00e7 olarak, do\u011frudan bir ili\u015fki tespit edilememekle birlikte MSG&#8217;nin baz\u0131 hassas gruplarda allerjik reaksiyonlara sebep olabilece\u011fi \u00e7e\u015fitli \u00e7al\u0131\u015fmalarda ifade edilmi\u015ftir. Bu \u00e7al\u0131\u015fmalarda, MSG&#8217;nin al\u0131nd\u0131\u011f\u0131 miktara ve ki\u015finin sa\u011fl\u0131k \u00f6zelliklerine ba\u011fl\u0131 olarak kusma, ba\u015f a\u011fr\u0131s\u0131, kas\u0131lma ve g\u00fc\u00e7s\u00fczl\u00fck gibi k\u0131sa s\u00fcreli etkilerin g\u00f6r\u00fclebildi\u011fi \u00f6ne s\u00fcr\u00fclmektedir. Di\u011fer taraftan, uzun vadeli klinik \u00e7al\u0131\u015fmalar ve laboratuvar \u00e7al\u0131\u015fmalar\u0131 MSG&#8217;nin g\u00fcvenli bir katk\u0131 maddesi oldu\u011funu ortaya koymaktad\u0131r. Serbest haldeki glutamat\u0131n baz\u0131 g\u0131dalar\u0131n do\u011fal bile\u015feni olmas\u0131 ve ayr\u0131ca katk\u0131 maddesi olarak MSG&#8217;nin kullan\u0131ld\u0131\u011f\u0131 dozlar\u0131n toplam diyetteki y\u00fck\u00fc belirgin \u015fekilde artt\u0131rmamas\u0131 da bu fikri desteklemektedir.<\/p>\n<p>MSG, Amerika, Avrupa Birli\u011fi ve T\u00fcrk G\u0131da mevzuatlar\u0131na g\u00f6re kullan\u0131m\u0131 yasal olan bir g\u0131da katk\u0131 maddesidir. Avrupa Birli\u011fi mevzuat\u0131n\u0131n g\u0131da katk\u0131lar\u0131, renklendiriciler ve tatland\u0131r\u0131c\u0131lar konusunu d\u00fczenleyen 95\/2\/EC kodlu direktifi, izin verilen limitler i\u00e7indeki kullan\u0131m\u0131na yasal g\u00fcvence sa\u011flar. En son 22.05.2008 tarihinde g\u00fcncellenen T\u00fcrk G\u0131da Kodeksi &#8220;Renklendiriciler ve Tatland\u0131r\u0131c\u0131lar D\u0131\u015f\u0131ndaki G\u0131da Katk\u0131 Maddeleri Tebli\u011fi&#8221;ne g\u00f6re t\u00fcm g\u0131da maddelerinde glutamik asit veya tuzlar\u0131n\u0131n kullan\u0131m limiti 10 g\/kg, \u00e7e\u015fni maddelerinde ise QS (Belirlenmemi\u015f miktar, Quantum Satis) olarak verilmektedir. Amerika&#8217;da ise serbest toplam glutamat miktar\u0131 y\u00fcksek olan g\u0131dalarda bu de\u011ferin etiket \u00fczerinde belirtilmesi \u00f6n g\u00f6r\u00fclm\u00fc\u015ft\u00fcr. T\u00fcm katk\u0131 maddeleri i\u00e7in oldu\u011fu gibi MSG i\u00e7in de doz kritik olan husustur. Normal ko\u015fullarda fayda sa\u011flamak amac\u0131yla g\u0131daya ilave edilen \u00e7e\u015fitli maddeler baz\u0131 durumlarda olumsuz etkilere de sebep olabilmektedir. Bu durum genellikle katk\u0131 maddesinin fazla veya yanl\u0131\u015f kullan\u0131m\u0131, \u00fcretimin veya depolaman\u0131n yanl\u0131\u015f bir basama\u011f\u0131 s\u0131ras\u0131nda ilavesi veya katk\u0131 maddesinin safl\u0131\u011f\u0131n\u0131n ya da kalitesinin d\u00fc\u015f\u00fck olmas\u0131 nedenleri ile ortaya \u00e7\u0131kmaktad\u0131r.
