Bu risk \u201cD\u00fc\u015f\u00fck asitli\u201d g\u0131dalardan yap\u0131lan konservelerde s\u00f6z konusudur. Evlerde en \u00e7ok sebze konservesi yap\u0131lmaktad\u0131r. Sebzelerin \u00e7o\u011fu da d\u00fc\u015f\u00fck asitlidir. \u00d6rn: ye\u015fil fasulye, bezelye, m\u0131s\u0131r, biber, mantar, kabak, patl\u0131can, patates vb. Sebzelerin di\u011fer bir \u00f6zelli\u011fi de yeti\u015ftirilme a\u015famas\u0131nda toprakla daha yo\u011fun temas etmeleridir. Bu iki \u00f6zellik bir araya geldi\u011finde, konserveler yetersiz \u0131s\u0131l i\u015fleme maruz kald\u0131 ise<em> Clostridium botulinum <\/em>\u00a0riski ortaya \u00e7\u0131kar. <em>Clostridium botulinum, toprakta<\/em> bolca bulunan ve havas\u0131z ortamlarda spor ve toksin olu\u015fturabilen n\u00f6rotoksik bir bakteridir.\u00a0 Toksinleri insanlarda \u00f6l\u00fcme kadar giden bir\u00e7ok rahats\u0131zl\u0131\u011fa neden olabilmektedir. Genelde g\u0131dan\u0131n al\u0131\u015f\u0131ld\u0131k tad\u0131nda ve kokusunda hi\u00e7bir de\u011fi\u015fikli\u011fe yol a\u00e7mad\u0131\u011f\u0131ndan, t\u00fcketicilerin tat ve koku yoluyla bu riski fark etmeleri m\u00fcmk\u00fcn de\u011fildir. Olu\u015fan toksin s\u0131cakl\u0131\u011fa diren\u00e7li de\u011fildir ancak gerek so\u011fuk t\u00fcketilen zeytinya\u011fl\u0131 yemekler gerekse s\u00f6z konusu konservelerle temastan sonra di\u011fer g\u0131dalarla temas eden ka\u015f\u0131k vb risk olu\u015fturur.<\/p>\n<p>Domates asitli bir g\u0131dad\u0131r, bu nedenle ev yap\u0131m\u0131 domates konserveleri riskli olarak de\u011ferlendirilmezler. Ancak i\u00e7lerine biber, so\u011fan gibi di\u011fer sebzeler eklenmemelidir. Bombajl\u0131 \u00fcr\u00fcnlerde kutunun alt\u0131nda ve \u00fcst\u00fcnde \u015fi\u015fkinlik g\u00f6zle g\u00f6r\u00fcl\u00fcr bir durumdad\u0131r.
